From Rennet to Thistles: The Evolution of Cheesemaking Coagulants.

Cheese is a popular food item enjoyed all over the world. It comes in various flavors, textures, and shapes. One of the critical steps in producing cheese is coagulation. Coagulation refers to the process of turning liquid milk into solid curds by adding rennet or other coagulating agents.

Rennet is an enzyme that occurs naturally in the stomach lining of ruminant animals like cows, sheep, and goats. The enzyme facilitates digestion by breaking down proteins in milk into smaller molecules for easy absorption through the intestinal walls. This same property makes rennet a valuable ingredient in cheesemaking.

Traditionally, cheesemakers used animal-derived rennet for coagulation. However, due to ethical concerns and dietary restrictions such as veganism, plant-based alternatives are becoming more popular today. Popular plant-based options include microbial and vegetable rennet.

Microbial rennet is derived from fungi or bacteria cultures grown on substrates like soybeans, corns, or wheat middlings while vegetable rennet comes from plants like thistles or fig leaves.

Coagulation can also be achieved using acidification instead of enzymes such as vinegar or lemon juice; however, this method produces a different type of cheese with a sour flavor profile commonly found in cottage cheese.

In summary, using rennet for coagulation during cheesemaking remains a popular method due to its effectiveness at creating texture and flavor profiles desired by consumers worldwide.
