Cheese making is a fun and rewarding activity that can be done in the comfort of your own home. It’s a great way to use up excess milk from your dairy animals, and it can also help you save money on store-bought cheese. In this article, we will provide you with everything you need to know about cheese making as a beginner homesteader.
The first step in cheese making is selecting the right type of milk. You should choose fresh, raw milk from cows, goats or sheep for best results. The fresher the milk, the better because it has more enzymes that are essential for cheesemaking.
Next, heat your milk gently until it reaches 86°F. Once you reach this temperature range add starter culture and rennet enzyme – these are essential ingredients for coagulating the milk into curds.
After adding those ingredients let it sit undisturbed at room temperature until set (usually between 45 minutes and an hour). Then cut the curd mass into small pieces using a long knife or spatula; this process allows whey to drain out quickly giving us solidified chunks called curds.
Once separated from whey allow draining of extra whey through cheesecloth by placing them in molds under light pressure overnight or so depending upon desired firmness – some cheeses require weeks of aging!
Now comes one of my favorite parts- flavoring! Add salt and any additional seasonings desired like herbs or spices before pressing under weights which will squeeze remaining water out creating harder texture ideal for slicing/shredding etc…
Finally, wrap cheese up well after drying completely removing any surface mold growth if present- then age according to taste preference either refrigerated or unrefrigerated.
