Instructions:

Step 1: Clean the meat thoroughly and cut it into small chunks, removing any bones or gristle. Chill in the fridge for about an hour to make it easier for the grinder to process.

Step 2: Set up your meat grinder following the manufacturer’s instructions. Start grinding the chilled meat using a coarse plate.

Step 3. In a large mixing bowl, combine all of your seasonings and mix well.

Step 4: Add ground pork to the seasoning mixture and mix together with clean hands until everything is evenly distributed throughout.

Step 5: Once mixed properly, let rest in refrigerator covered overnight so that flavors can meld together.

Step 6: Soak hog casings in lukewarm water for at least an hour before stuffing them with sausage mixture

Step 7: With your sausage stuffer ready, carefully feed sausage mixture into casing while avoiding air pockets as much as possible but not overstuffing them either.

Step 8: Twist off sections of sausage once filled and tie ends securely with string or twine then prick lightly with a fork to allow steam escape during cooking process
