Fermenting Foods and Beverages: A Memoir
When I first started fermenting foods and beverages, I had no idea what I was getting into. It all started when a friend gave me a scoby to make kombucha. At the time, I didn’t even know what kombucha was, let alone how to make it.
But as I delved deeper into the world of fermentation, I discovered not only the health benefits but also the delicious flavors that can be achieved through this process.
One thing that surprised me about fermenting foods and drinks is how easy it is. All you need are some basic ingredients like fruit, vegetables, sugar or honey and water. Then you leave them in a jar with a lid for several days to weeks depending on what you’re making.
One of my favorite things to ferment is sauerkraut. It’s simple yet nutritious and has a tangy flavor that pairs well with many dishes. To make sauerkraut at home, shred some cabbage finely and mix it with salt until it starts releasing its own juice. Then pack it tightly into a jar leaving about an inch of space at the top before covering it with a lid.
Another fermented food item that has gained popularity in recent years is kimchi- which originates from Korea . Kimchi is made by mixing vegetables like napa cabbage , carrots , radish etc along with ginger garlic paste & red chili flakes together then leaving them to ferment over several days .It’s both spicy & tangy which makes for an excellent accompaniment or side dish .
Now coming back onto Kombucha – This drink has been around for centuries in parts of Asia but recently caught interest due to its supposed health benefits -which include aiding digestion , boosting immunity & liver detoxification among others . The process involves brewing tea (with black / green tea being most commonly used) adding sugar (or any other sweetener of your choice) & then adding the scoby (short for symbiotic culture of bacteria and yeast ) which will ferment the tea mixture into kombucha over a period of 1-3 weeks depending on how strong you like it .
One thing to keep in mind when fermenting is that it’s important to use clean utensils and jars. Any unwanted bacteria can ruin the fermentation process, so cleanliness is key.
But perhaps one of the best things about fermenting at home is being able to experiment with different flavors and ingredients. For example, I’ve made ginger beer with fresh ginger root and lemonade with strawberries.
Overall, fermenting foods and beverages has become a fun hobby for me that also happens to be good for my health. It’s an easy way to incorporate more probiotics into my diet while enjoying tasty new dishes.
