1. Always use tested recipes: It’s essential to use tested recipes when pressure canning because they have been developed and researched to ensure safety. Don’t modify any recipe or add extra ingredients unless you’re sure it won’t affect the acidity level.
2. Check your equipment: Before starting, make sure all your equipment is in good condition and functioning correctly. The lid on your pressure canner should seal tightly; if not, replace the gasket or rubber seal before using it again.
3. Follow instructions carefully: Follow each step of the recipe carefully from start to finish. Make sure jars are clean before filling them with hot food – wipe rims with a damp cloth before putting lids on.
4. Leave enough headspace: When filling jars with food, leave some space at the top (headspace) for expansion during processing – usually ¼ inch to ½ inch depending on what’s being canned.
5. Process at the correct pressure: Keep an eye on your gauge throughout processing time; adjust heat as needed to maintain proper pressure levels.
6. Let jars cool naturally after processing: Once finished processing at high temperatures under high pressures don’t rush cooling down process by submerging jars in water or exposing them to cold air suddenly which may cause cracking or breaking of glass due thermal shock instead let them rest undisturbed until they reach room temperature over several hours.
7.Store properly labeled cans in cool dry place away from sunlight : After letting cooled jars rest undisturbed inspect seals looking for bulges leaks cracks etc discard any jar that doesn’t pass inspection. Store labeled jars in a cool, dry place away from sunlight.
