Sourdough Discard Recipes for Delicious and Sustainable Baking

Sourdough baking is a trend that has taken off in recent years. Not only is it delicious, but it’s also sustainable because you don’t need to buy yeast every time you want to bake bread or pastries. However, one downside of sourdough baking is the amount of discard you generate when feeding your starter. But don’t throw away that excess sourdough! There are plenty of recipes out there that make use of this discard and turn it into something tasty.

1. Sourdough Pancakes

Pancakes are a breakfast staple, and adding sourdough discard to the batter gives them an extra tangy flavor and lightness. Mix 1 cup flour, 2 tablespoons sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt with 1 cup sourdough discard and let sit for at least half an hour before cooking on a hot griddle.

2. Sourdough Crackers

These crackers are crispy and flavorful thanks to the addition of herbs like rosemary or thyme. Mix together 1 cup flour (you can use whole wheat or rye for more flavor), ½ teaspoon salt, one tablespoon olive oil along with half a cup of water and half a cup of sourdough discard until well combined. Roll out thinly on parchment paper lined sheet pan then score lightly before baking at around 350°F until crispy (around twenty minutes).

3. Sourdough Banana Bread

Banana bread always tastes amazing but using up some discarded sourdough will add some depth of flavor while reducing waste in your kitchen. To start mix together two cups all-purpose flour (whole wheat works too), one teaspoon cinnamon, one-half teaspoon nutmeg as well as two teaspoons baking powder in large bowl then set aside while mixing three mashed ripe bananas with three-quarters cups brown sugar; add in two eggs, one teaspoon vanilla extract and half a cup of sourdough discard. Add the dry ingredients to the wet ones until well combined before baking at 350°F for an hour.

4. Sourdough Pizza

Making pizza dough with sourdough discard gives it more flavor and a crispy texture that can’t be beaten. Mix together 2 cups flour, 1 teaspoon salt, ½ teaspoon yeast (if desired), half a cup of water and half a cup of sourdough discard; knead dough until smooth then let rise for at least an hour before rolling out thinly on parchment paper lined sheet pan or pizza stone. Add your toppings then bake at around 450°F until crust is golden brown.

5. Sourdough Waffles

Waffles are another breakfast favorite that can benefit from some sourdough discard thrown into the mix! Combine one-and-a-half cups flour with one tablespoon sugar, two teaspoons baking powder as well as half-teaspoon each of baking soda and salt along with one-and-three-quarter cups buttermilk (or plain yogurt) as well as two large eggs and finally three tablespoons melted butter or oil plus half-cup sourdough discard whisked in thoroughly. Let this batter sit for about fifteen minutes before pouring onto waffle iron plates.
