Master the Art of Sourdough Bread Baking with These Oven Setup Tips

To transfer dough from basket onto Dutch Oven lid use parchment paper placed over basket then flip upside down onto lid then score top loaf with sharp knife or lame prior covering with other half of dutch pot.
This method creates steam within pot during initial stages of baking giving better rise by keeping dough from drying out. Once the initial stage is completed remove lid to finish baking.

For free-form loaves, place your shaped dough directly onto a hot baking stone or sheet pan sprinkled with cornmeal and score the top of the loaf with a sharp blade or lame. You can create steam by pouring hot water into the preheated sheet pan or skillet at the bottom of your oven.
Remember to rotate bread halfway through baking time for even results.

Whether you’re using Dutch ovens or free-form loaves, it’s important to let your sourdough bread cool completely before slicing into it. This will allow the crumb structure to set and prevent any gummy texture in center slice.
