4. Take gravity reading
Using hydrometer take initial gravity reading which should range between 1.090 – 1.120 depending on amount of honey used.The specific gravity will help determine alcohol content after fermentation.

5.Add yeast
Activate your chosen variety of yeast according to package instructions. Pitch yeast in the mixture and stir well to ensure that it is fully mixed.

6. Allow fermentation
Place airlock on top of your brewing vessel and let the mead ferment for at least two weeks or until all activity has stopped.

7. Transfer to secondary vessel
Transfer your fermented mead into a new sanitized carboy, leaving behind any sediment at the bottom of your previous vessel, known as racking.

8. Age your mead
Ageing can take between few weeks to several months depending on personal preference and taste profile desired.

9.Bottle Mead
Using a siphon hose transfer aged mead into sanitized bottles adding priming sugar if opting for carbonation before sealing with cork or cap and storing upright in cool dark place
