Sourdough bread is a classic that has been enjoyed for centuries. There’s nothing quite like the taste and texture of freshly baked sourdough bread, but getting it just right can be a bit of an art form. One key to success is having a reliable baking schedule.
Firstly, you need to maintain your sourdough starter by feeding it regularly. A good rule of thumb is to feed your starter once every 12 hours until it becomes active and bubbly. Once this happens, you can switch back to once-a-day feedings.
Once your starter is ready, you need to prepare the dough. This usually involves mixing flour, water, salt, and your starter together in a bowl and leaving it to rise overnight or for several hours. The length of time needed will depend on temperature and humidity levels in your kitchen.
After the dough has risen sufficiently, divide it into portions (depending on how many loaves you want) and shape them into rounds or oblongs. Then comes the final rise which should take about 2-4 hours depending on room temperature.
Finally, preheat the oven to around 450°F (230°C) while placing cast iron pots with lids inside for about half an hour before baking time arrives.
Bake each loaf in its own pot with lid on for approximately 30 minutes at high heat then remove cover and bake uncovered until crusty browned top forms; usually another 10 -15 minutes will do just fine!
