Water Bath Canning: A Beginner’s Guide

Canning is a great way to preserve the bounty of your garden or local farmers market. Water bath canning is an easy and safe method for preserving high-acid foods like fruits, tomatoes, pickles, and jams. Here’s how you can get started with water bath canning.

Firstly, gather all the necessary equipment such as a large pot with a lid that is deep enough to cover your jars by at least one inch of water when they are sitting upright on a rack in the pot. You’ll also need mason jars with lids and bands, jar lifter tongs, funnel, ladle and clean towels.

Next step is preparing your produce for canning. Wash and prepare fruits or vegetables according to recipes instructions.

Once you have prepared your produce it’s time to fill up the jars. Be sure not to overfill them as headspace is needed for expansion during processing.

Before placing filled jars into boiling water make sure that there are no air bubbles trapped inside the jar by inserting a non-metallic spatula around the edges of each jar before putting on lids.

Place jars onto rack in boiling water making sure they don’t touch each other or sides of pot then put lid on top of pot tightly so heat does not escape while processing takes place.

After 10-15 minutes remove jars from hot water using jar lifter tongs and set aside on towel-covered countertop until cooled completely which usually takes about 12 hours depending on room temperature.
