Amaranth Milling: A Nutritious and Versatile Grain

Amaranth is an ancient grain that has been cultivated for thousands of years. It was a staple food in the diets of the Aztecs and other indigenous peoples in Mexico, Central America, and South America. Today, amaranth is making a comeback as a nutritious and versatile ingredient in modern cuisine.

One of the great things about amaranth is that it’s gluten-free, which makes it an excellent choice for people with celiac disease or gluten sensitivity. It’s also high in protein (up to 13%), fiber (up to 6%), and minerals like iron, magnesium, phosphorus, manganese, and calcium.

To mill amaranth at home, you’ll need a grain mill or a coffee grinder that can grind fine flour. Start by washing the grains thoroughly under running water to remove any dirt or debris. Then spread them out on a baking sheet to dry completely.

Once the grains are dry, pour them into your grain mill or coffee grinder and process until you get a fine flour consistency. You can use this flour to make breads, cakes, pancakes, waffles, muffins – anything that requires wheat flour!

You can also pop amaranth like popcorn to make delicious snacks. To do this heat some oil in a pan over medium-high heat until hot but not smoking. Add some amaranth seeds (about 2 tablespoons) and cover with lid immediately; shake pot constantly until popping slows down significantly (~1-2 minutes). Remove from heat promptly once popping stops completely.
