Interviewee: Of course! I grew up in an Italian family where my grandmother made fresh pasta every Sunday. As a child, I loved helping her make the dough and shape it into different pasta shapes. When I moved away from home, I realized that store-bought pasta just didn’t compare to the taste and texture of homemade pasta. So, I started making my own at home.
Interviewer: That’s great! Can you walk us through the process of making homemade pasta?
Interviewee: Sure thing! The first step is to mix together flour and eggs until it forms a dough. You want to knead the dough for at least 10 minutes until it becomes smooth and elastic. Then, let the dough rest for about half an hour.
Next, roll out the dough with a rolling pin or use a pasta machine to get it thin enough for your desired shape. Cut the noodles into your preferred size and shape – spaghetti or fettuccine are popular choices.
After shaping the noodles, boil them in salted water for no more than two minutes (depending on thickness) before serving with your favorite sauce!

Interviewee: Yes! One important tip is not to overwork the dough when kneading it because this will result in tough noodles. Also be sure not overcook them as they should still have some bite left after boiling.
Another helpful trick is to add a little bit of olive oil to the dough to make it more pliable. Lastly, you can easily add flavor and color by incorporating herbs or vegetables like spinach or beetroot into the dough.
