Duck or goose processing for meat and feathers is an essential skill for homesteaders and those who are interested in self-sufficiency. These birds not only provide delicious meat but also yield valuable feathers that can be used for various purposes. Whether you’re a beginner or experienced homesteader, here are 15 steps to help you successfully process ducks or geese.

1. Choose the right breed: Select a breed known for its meat and feather quality, such as Pekin ducks or Embden geese.

2. Age matters: Process birds when they reach maturity, usually around 4-5 months old for ducks and 6-8 months old for geese.

3. Slaughtering process: Humanely slaughter the bird by swiftly cutting its jugular vein using a sharp knife while holding it upside down.

4. Bleeding out: Allow the bird to bleed out completely before proceeding to the next step.

5. Feather removal: Pluck the feathers carefully from the bird’s body, starting from the neck towards the tail. Ducks have more delicate feathers than geese, so be cautious not to tear them.

6. Waxing alternative: For larger flocks or if you find plucking time-consuming, consider waxing as an efficient method of feather removal.

7. Gutting procedure: Make an incision between the vent and breastbone to remove internal organs with your hands or a spoon-like tool called a gut hook.

8. Save giblets: Set aside edible parts like heart, liver, gizzard, and neck for later use in cooking recipes or pet food.

9. Cold water bath: Rinse the carcass thoroughly inside and out with cold water to remove any remaining blood or debris.

10. Aging period (optional): Some prefer aging duck or goose meat in cool temperatures for up to three days before further processing as it enhances flavor and tenderness.

11. Cut into parts: Use a sharp knife or poultry shears to divide the bird into desired serving portions like breasts, legs, wings, and back.

12. Vacuum sealing: If you have a vacuum sealer, individually package each portion before freezing. This method helps preserve freshness and prevents freezer burn.

13. Freezing or cooking immediately: Either freeze the meat for long-term storage or cook it right away for immediate consumption.

14. Feather preparation: Collect feathers separately based on quality and size. Remove any remaining downy feathers by hand or using a stiff brush.

15. Feathers’ end use: Utilize feathers for various purposes such as pillows, duvets, crafts, fly tying (for fishing), or fashion accessories like hats and jewelry.
