But instead of heading to the grocery store, why not try making your own homemade bacon and ham? Not only will it save you a trip to town, but it’ll also give you complete control over the quality of ingredients and flavors. So grab your apron and let’s dive into the world of DIY porky goodness!

First things first, let’s talk about bacon. Making your own bacon at home might sound intimidating, but trust me, it’s easier than you think. To start off, you’ll need a slab of fresh pork belly from a trusted source – maybe even one of your own pigs if you’re lucky enough to have them! A good tip is to look for pork belly with an even fat-to-meat ratio.

Once you’ve got your pork belly ready, it’s time to prepare the cure. Now there are countless variations out there when it comes to curing bacon, so feel free to get creative with spices and flavors. A basic cure usually consists of kosher salt, brown sugar or maple syrup for sweetness (if desired), black pepper for that classic smoky taste, and pink curing salt (also known as Prague powder) for preserving purposes.

Rub the cure mixture all over the pork belly until every inch is coated evenly. Then place it in a large Ziploc bag or wrap tightly in plastic wrap. Pop it in the refrigerator for around seven days – yes folks, patience is key here!

After patiently waiting (or impatiently salivating), take out that glorious piece of cured meat from the fridge. Rinse off any excess curing mixture under cold water and pat dry with paper towels. At this point, some people like to add extra seasoning such as ground coffee or herbs before smoking their bacon.

Speaking of smoking, it’s time to fire up the grill or smoker. You want a low and slow smoke, aiming for a temperature around 200-225°F (93-107°C). Add some wood chips or chunks of your favorite hardwood, like apple or hickory, to create that smoky flavor we all love.

Place your cured pork belly on the grates and let it smoke away for about two hours. Keep an eye on the internal temperature – you’re looking for 150°F (66°C) to ensure it’s fully cooked. Once done, let the bacon cool down before slicing into thin strips. And voila! You’ve just made your very own homemade bacon!

Now onto ham – another delectable treat that can be made right in your own kitchen. For making ham at home, you’ll need a fresh pork leg with the bone-in. The process is quite similar to bacon-making but does require a bit more time and effort.

Start by preparing a brine solution using water, salt, sugar (brown or white), pink curing salt (Prague powder), garlic cloves, and any other herbs and spices you desire. Bring this mixture to a boil until everything dissolves completely.

Once cooled down completely, place the pork leg in a large food-safe container or plastic bag and pour in enough brine solution to submerge it entirely. Refrigerate this heavenly package for one day per pound of meat.

After patiently waiting again (yes folks, I know patience isn’t easy when deliciousness is involved), take out the pork leg from its savory bath. Rinse off any excess brine solution under cold water and pat dry with paper towels.

Next comes cooking – there are several methods you can use here depending on personal preference; boiling being one of them. Place your cured pork leg in a large pot filled with enough water to cover it completely along with aromatics such as bay leaves, cloves, and peppercorns. Slowly bring it to a simmer and cook for about 20 minutes per pound until the internal temperature reaches 160°F (71°C).

Once cooked, let your homemade ham cool down before carving into succulent slices. You can enjoy it right away or glaze it with some honey or maple syrup and pop it in the oven at 350°F (175°C) for a final touch.
