“Master the Art of Homemade Sourdough Baguettes: Crusty, Chewy, and Delicious!”

If you’re a fan of crusty, chewy bread with a tangy flavor, then homemade sourdough baguettes are the perfect recipe for you. With just a few simple ingredients and a little bit of patience, you can create your own delicious artisanal bread right in your own kitchen.

To start, you’ll need to create and maintain a sourdough starter. This is essentially a mixture of flour and water that ferments over time, developing the unique sour taste that gives sourdough its name. Once your starter is ready to use (usually after about 7-10 days), it’s time to make the dough.

In a large bowl, combine 500 grams of bread flour, 350 grams of water, and 100 grams of active sourdough starter. Mix until all the ingredients are well incorporated, then cover the bowl with plastic wrap and let it rest for about an hour.

After resting, sprinkle 10 grams of salt over the dough and use your hands or a dough scraper to fold it into the mixture. This helps distribute the salt evenly throughout the dough. Let it rest again for another hour before performing a series of stretch-and-fold techniques every half-hour for two hours.

Once properly rested and developed gluten structure through folding technique; divide the dough into four equal portions. Gently shape each portion into long baguette shapes by folding one side towards center while stretching outwards slightly until desired length is achieved.

Place the shaped baguettes on a parchment-lined baking sheet or couche cloth (a linen fabric specifically designed for proofing bread) dusted generously with flour to prevent sticking. Cover them loosely with plastic wrap or damp towels and allow them to rise at room temperature for about 2-4 hours depending on ambient temperature until they have doubled in size.

Preheat your oven to 450°F (230°C) along with placing an empty baking dish on lower rack. Once the oven is hot and the baguettes are fully proofed, carefully transfer them to a baking stone or sheet pan sprinkled with cornmeal or semolina.

Score the tops of each baguette with a sharp knife or lame in diagonal slashes to allow for proper expansion during baking. Place the baking sheet onto middle rack of preheated oven, then quickly pour about 1 cup of hot water into the empty dish on lower rack before closing oven door immediately.

Bake for approximately 20-25 minutes until golden brown and crusty. Remove from oven and let cool on a wire rack before slicing into your homemade sourdough baguettes.
