For those with a sweet tooth, we turn to Lisa Davis, a passionate home cook and author of the cookbook “From Scratch.” She reveals her recipe for tangy sourdough discard chocolate cake.

“Adding sourdough discard to cakes not only enhances their flavor but also improves their texture,” says Lisa. “My go-to chocolate cake recipe calls for one cup of discarded starter, two cups of sugar, three eggs, half a cup each of vegetable oil and unsweetened cocoa powder, one teaspoon each of baking soda and vanilla extract, and one cup of boiling water.”

Lisa mentions that while the concept might sound unusual at first glance, the taste is divine—a perfect balance between rich chocolate and tangy sourness.

As we continue our exploration into the world of discarded sourdough recipes, we come across an unexpected yet delightful creation: Sourdough Discard Pizza Dough. We chat with John Anderson from The Rustic Oven who shares his technique.

“For this pizza dough recipe,” John begins excitedly, “I combine one cup of sourdough discard with 2 ½ cups of all-purpose flour and two teaspoons each of salt and olive oil. Then I gradually mix in warm water until I achieve a soft elastic dough.”

Lastly, we speak with Sarah Thompson from Farm Fresh Eats who offers us a refreshing way to use up our excess starter—Sourdough Discard Lemon Bars.

“To make these delicious lemon bars,” Sarah advises, “combine 1 ¼ cups all-purpose flour with half a cup each of powdered sugar and cold butter. Press this mixture into the bottom layer before baking it for about 15 minutes at 350°F (175°C). Meanwhile, whisk together two eggs along with one and a half cups of granulated sugar, two tablespoons of all-purpose flour, the juice, and zest of one lemon.”

Sarah emphasizes that the addition of sourdough discard to these lemon bars provides an unexpected tanginess that perfectly balances their sweetness.
