Preserve, Snack, and Savor: The Art of Homemade Jerky and Pemmican

Making homemade jerky and pemmican is not only a great way to preserve meat, but also a delicious and nutritious snack for those living a rural lifestyle or homesteading. While store-bought options are readily available, there’s something special about making your own.

To start with homemade jerky, choose lean cuts of meat like beef, venison, or turkey. Trim off any excess fat and slice the meat into thin strips against the grain. Marinating the meat is crucial for flavor development. Common marinade ingredients include soy sauce, Worcestershire sauce, liquid smoke, garlic powder, onion powder, and black pepper. Let the meat marinate in the refrigerator for at least 4 hours or overnight.

Next comes the drying process. You can use a food dehydrator or an oven set at its lowest temperature. Arrange the marinated meat strips on racks or baking sheets covered with parchment paper. Leave space between each strip to allow proper airflow. Dry until tough yet chewy (usually around 4-6 hours).

Moving on to pemmican – it’s an ancient survival food made from dried meat mixed with rendered fat and berries or nuts for added flavor and energy sources. Start by drying lean meats like beef or bison using similar methods as making jerky.

Once you have dried your meats thoroughly, grind them into small pieces using a food processor or mortar and pestle until they resemble coarse crumbs.

In a separate container gently melt animal fat over low heat until it becomes liquid but not hot enough to burn or smoke. Mix equal parts of ground dried meats with melted fat while adding in some dried berries such as cranberries for sweetness if desired.

Press this mixture firmly into molds like muffin tins lined with parchment paper or form them into bars by hand before letting them cool completely.
