Colby Cheese Making: A Journey into Homesteading
Living on a rural farm, there’s something incredibly rewarding about being able to produce your own food. One of the most delightful and satisfying processes I’ve experienced is making Colby cheese from scratch. It’s not only a way to create a delicious and versatile cheese for my family but also an opportunity to connect with our homesteading roots.
The first step in making Colby cheese is gathering fresh, high-quality milk. Ideally, raw cow’s milk straight from the farm ensures the best flavor and texture. However, if raw milk is not available or preferred, store-bought whole milk can be used as well.
After acquiring the milk, it needs to be heated gently in a large stainless-steel pot until it reaches 90°F (32°C). This temperature allows the starter culture to develop properly. Once at this stage, I add mesophilic starter culture and let it sit for approximately one hour. The starter culture kickstarts fermentation and adds acidity and flavor to the finished product.
Next comes adding rennet—a natural enzyme that promotes curd formation—to solidify the milk into curds and whey. After stirring gently for about two minutes, I allow the mixture to rest undisturbed for another hour while maintaining its temperature at 90°F (32°C).
Once set, I carefully cut the curds into small cubes using a long knife or curd cutter tool. The aim here is consistent sizing so that they heat evenly during cooking. Afterward, using moderate heat under constant stirring over approximately 30 minutes raises the temperature slowly up to 102°F (39°C).
At this point, draining off some of the whey will help achieve desired moisture content in cheese later on; however much you choose depends on personal preference—more drainage results in drier cheese while less creates creamier textures.
To finish forming our Colby cheese’s unique texture, the curds are then pressed into molds. A cheese press applies gentle pressure for a few hours, gradually increasing over time to expel more whey and create a solid block.
Once the pressing stage is complete, I remove the cheese from the mold and soak it in a brine solution. The brining process adds flavor and helps preserve the cheese by inhibiting harmful bacteria growth. Afterward, I place it on a wooden board or mat to air dry at room temperature for several days or until fully dried.
Finally, the aging process begins. Colby cheese typically ages for two to three months under controlled conditions of humidity and temperature between 50-55°F (10-13°C). This period allows flavors to develop further as well as giving Colby its characteristic smooth texture.
Making Colby cheese is undoubtedly an involved process but one that greatly rewards patience and effort with delicious results. As homesteaders seeking self-sufficiency, producing our own food brings us closer to nature while providing nourishment for ourselves and our loved ones.
