Master the Art of Camembert Cheese Making: A Cheesy Adventure Awaits!

Are you a cheese lover who dreams of making your own delicious Camembert at home? Well, look no further! In today’s post, we will take you on an amusing journey through the art of Camembert cheese making. So, put on your apron and get ready to dive into the world of curds and whey!

First things first, let’s talk about the ingredients needed for this cheesy adventure. To make Camembert, you’ll need fresh cow’s milk (preferably raw), mesophilic starter culture, calcium chloride (if using pasteurized milk), liquid rennet, non-iodized salt, and Penicillium candidum mold powder. Don’t worry; it sounds more complicated than it actually is!

Now that we have our ingredients gathered like a flock of sheep in a meadow let’s start with step one: heating the milk. Pour the milk into a large pot and slowly heat it over low flame while stirring gently with a wooden spoon. Imagine yourself as an orchestra conductor leading a symphony of flavors.

Once the milk reaches around 86°F (30°C), sprinkle in the mesophilic starter culture while pretending to be Harry Potter casting spells with powdered magic dust. Stir it in thoroughly until fully dissolved.

At this point – cue dramatic music – add calcium chloride if you’re using pasteurized milk to help restore balance to The Force… I mean, ensure proper coagulation. Dissolve half a teaspoon of calcium chloride in ¼ cup cool water before pouring it into the pot like an alchemist adding an essential potion ingredient.

Next up is step two: coagulation or “the magical transformation.” Remove your imaginary wizard hat for this part because here comes some serious science! Dilute ⅛ teaspoon liquid rennet in ¼ cup cool water and then pour this enchanted mixture into the pot while maintaining your best poker face.

Cover the pot and let it sit undisturbed for approximately 45 minutes. During this time, the rennet will work its magic, turning the milk into a curd mass that resembles a cloud floating in the sky.

Once the curds have set, you can put your poker face aside and move on to step three: cutting the curd. This is where things start to get messy… I mean fun! Using a long knife or curd cutter, cut the curds into uniform cubes of around ½ inch (1 cm). Imagine yourself as a sculptor shaping blocks of cheese with precision and finesse.

After cutting, allow the curds to rest for five minutes while you sip some tea or twiddle your thumbs. Then slowly stir them for another ten minutes like a gentle breeze caressing autumn leaves.

Now comes step four: draining. Gently ladle the curds into small perforated molds lined with cheesecloth. Think of it as tucking those little clouds comfortably in their beds for a long nap.

Place these molds on top of a draining mat or rack over another container to catch any whey that drips off. Let gravity do its job while you go about your daydreaming business.

Overnight – cue dream sequence music – allow the Camembert gods to work their magic by ripening at room temperature. They say patience is a virtue, so resist peeking until morning!

The final act begins with step five: salting and aging our precious cheese babies. Sprinkle non-iodized salt over each cheese surface like fairy dust falling from pixie wings—just enough to lightly coat them but not too much that they’ll taste like ocean water!

Transfer these little bundles of joy onto aging mats and place them in an environment with high humidity (around 85%) and cool temperatures (50-54°F/10-12°C). A cave would be ideal here; perhaps you can borrow one from a friendly neighborhood bat.

Now, the waiting game begins. Allow your Camembert to age for at least two weeks, but longer if you desire a stronger flavor like Arnold Schwarzenegger flexing his muscles. During this time, flip the cheeses daily and gently pat them dry with a paper towel if any moisture accumulates on the surface.

Finally, after all that anticipation, it’s time to savor the fruit of your cheesy labor! Cut into one of those beautiful rounds and let its creamy interior ooze out like molten gold onto your plate. Pair it with crusty bread, fresh fruits, or even a glass of wine if you’re feeling fancy!

Congratulations! You’ve successfully embarked on a cheese-making journey fit for champions. It may have been challenging at times – just like herding cats – but now you can proudly call yourself a Camembert aficionado.

Remember: making cheese is not only an art; it’s also an adventure filled with laughter and occasional mishaps. So don’t be afraid to embrace the quirks along the way and share this cheesy tale with fellow homesteaders who dare to dream big… or should we say “brie-g”?

Happy cheesemaking!
