Canning Salsa Verde: A Homesteader’s Guide

As a homesteader, there is nothing more satisfying than preserving the flavors of your garden to enjoy throughout the year. One versatile and delicious way to do this is by canning salsa verde. This tangy and vibrant green sauce made with tomatillos, onions, chili peppers, and cilantro adds a burst of flavor to any dish.

Before diving into the canning process, it’s essential to gather all the necessary ingredients and equipment. For salsa verde, you will need fresh tomatillos (about 3 pounds), onion (1 medium-sized), garlic cloves (2-3), jalapeno or serrano peppers (2-3), cilantro leaves (a handful), lime juice (2 tablespoons), salt (1 teaspoon), and cumin powder (½ teaspoon). Additionally, you will require mason jars with lids, a water bath canner or large stockpot for processing the jars, tongs for handling hot jars, a sharp knife or food processor for chopping ingredients, and measuring cups.

The first step in making salsa verde is preparing the ingredients. Start by husking and washing the tomatillos thoroughly since they have a sticky residue under their husks. Once clean, chop them into quarters. Then dice the onion finely while mincing garlic cloves. If using peppers with seeds removed for less heat in your salsa verde recipe; if you prefer spicier salsa reduce seeding or skip removing them altogether.

Next comes cooking down these ingredients until soft and well-blended together. You have two options when it comes to cooking: stovetop or oven-roasting method. To cook on stove-top simply combine all chopped vegetables along with lime juice in a saucepan over medium heat until they soften evenly—stirring occasionally during cooking time which should take about 10-15 minutes.

For those who prefer roasted flavors in their salsa verde, oven-roasting is the way to go. Spread the chopped ingredients on a baking sheet and place it under a preheated broiler for about 5-7 minutes or until they become slightly charred. Remember to turn them occasionally for even roasting.

Now that you have your cooked salsa verde ready, it’s time to process and preserve it in jars. Sterilize your mason jars by washing them thoroughly with hot soapy water or running them through a dishwasher cycle. Place the lids in a small saucepan filled with simmering water.

Using canning tongs, carefully pack the hot salsa verde into sterilized jars while leaving about half an inch of headspace at the top. Wipe any spills off the rim using a clean cloth or paper towel before placing the lid on top and tightening the metal band securely.

Process your filled jars in a water bath canner or large stockpot with enough boiling water to cover them by at least one inch. Bring the water back to a rolling boil and let it continue for 15 minutes (adjust processing time based on altitude). Afterward, remove jars from canner using tongs and let them cool undisturbed on a towel-lined countertop for 12-24 hours.

Once cooled, check that each jar has sealed correctly by pressing down on its center; if there’s no give when pressed, it means that jar is successfully sealed. Store properly sealed salsa verde in a cool, dark pantry for up to one year.
